Ooey Gooey Butter Cake Ice Cream | Bake the Book

Lucy Schaeffer

This Ample Hills Creamery: Secrets and Stories from Brooklyn's Favorite Ice Cream Shop recipe boasts pieces of yellow cake nestled in a cream cheese ice cream base. It's easily one of the most decadent recipes in the book, and for good reason: nearly every type of dairy product is used to create this beautiful monster.

Tips: This recipe reminds us of birthday cake ice cream more than anything else. You could toss a handful of sprinkles on top, but why do that when you can mix them right in? Add the desired amount of your favorite chocolate or multicolored sprinkles to the mix while you incorporate the cake into the ice cream.

Tweaks: Make the cake the night before, that way you won't have to run the oven the same day you intend to make ice cream. Doing this lets the butter and cream cheese fully soak into the cake, ensuring the chunks that make it into the ice cream are evenly textured. Plus, it's much easier to chop chilled cake into evenly-sized chunks.

As always with our Bake the Book feature, we have five (5) copies of Ample Hills Creamery: Secrets and Stories from Brooklyn's Favorite Ice Cream Shop to give away.
