Using the same flavors as the ever-popular holiday drink, The Four & Twenty Blackbirds Pie Book: Uncommon Recipes from the Celebrated Brooklyn Pie Shop serves up a pie that won't cause any hangovers. There's plenty of wintertime spice to go around, from the gingersnaps in the crust, to the cinnamon and nutmeg in the filling. Serve it during one of the many cold winter nights that continue to roll in.
Tips: The pie filling, before being baked, resembles cheesecake filling. That is to say, it's very loose and pourable. Keeping that in mind, pour gently. The crumb crust is a little delicate, and a less than careful filling of the crust can jostle it out of place.
Tweaks: Don't skip the rum; its flavor blends very well with the spices called for in the filling. Without it, the pie is certainly sweet and creamy, but feels like it's missing something. Dark rum isn't mandatory, however—brandy or white rum work as well.
