The bins of peaches and plums are starting to empty, so make use of the last fruit in this satisfying pie. Plums, with their sweet-tart flavor, are a good counterpoint to floral, sweet vanilla, and we love how they release their juices when they bake.
In fact the juices will start to bubble up through the buttery oatmeal crumble topping, but that's a good thing. Think of it as a last bit of summer peaking through.
