Citrus season came a bit late this year, which bummed out Keegan Gerhard, co-owner of D Bar (and frequent Food Network host) to no end. Sipping on clementine Izze soda was the closest he could get to satisfying a craving for citrus, one of his all-time favorite elements to showcase in desserts.
When the citrus crop finally came around, he decided to make the most of it by creating the "Sunshine on a Plate" ($10), a dessert designed to wow diners (and challenge his team of pastry chefs). The playful, yet elegant creation sings the praises of citrus, with elements like citrus glass, oven-dried meringue, and three different sorbets.
There are three main components: a buttermilk panna cotta with tangerine sauce, a mixed citrus tart, and a "blown-apart lemon tart".
The celebration of citrus is available until the end of May, at which time, a new plated dessert centered around one ingredient will emerge: a study of strawberries sourced from Suzie's Farm.
