Lady M's signature Mille Crêpe Cake is composed of over 20 layers of ultra-thin crepes with a light cream spread between each layer. "Our crepes are all hand-made, baked by our experienced bakers," says Romaniszyn. "The caramelized top gives a great zest to this cake."

This aptly-named cake is one of Romaniszyn's favorites at Lady M. "[It is] elaborately assembled with vanilla and chocolate sponge and is covered with smooth dark chocolate."

Gateau Nuage
Gateau Nuage

Gateau Nuage means "cloud cake" in French, and Lady M's light, whipped variation on the traditional cheesecake lives up to its name. "Longer baking time is required than the regular baked cheese cake in order to get a smoother texture," says Romaniszyn. "Powdered sugar-infused sour cream covers the top of the cake to make a well balanced sweetness."

Lady M imports the ultra-fine flour for the vanilla sponge in their Strawberry Shortcake from Japan. "The sponge used for this cake is very soft and fluffy," says Romaniszyn. "Diced strawberries are put in the fresh whipped cream instead of butter cream."

Mont Blanc

Lady M uses rich French chestnut puree and cream in their Mont Blanc recipe. "Our experienced bakers work on the special swirl design," says Romaniszyn. "You will also enjoy a hint of rum."
