In December 2010, St. Jack opened in Portland, Oregon, as a take on a typical bistro in Lyon, France. Open seven days a week, St. Jack has two separate sections, a patisserie and a restaurant. The patisserie is opened every day at 8 a.m. by pastry chef Alissa Rozos, who serves an array of savory and sweet treats on raised cake plates.
Rozos joined the St. Jack culinary team after working at other critically acclaimed Portland restaurants such as Clarklewis, 23Hoyt, and Bluehour. In 2012, Rozos was a finalist for Food & Wine magazine's "The People's Best New Pastry Chef" award.
