It's that time of year when plenty of people will be whipping up egg white omelets for breakfast or meringues for a light snack. The only problem? You're left with a batch of unused yolks. But don't just throw them out—here are some of our favorite ways to use leftover egg yolks.
Chocolate lovers have it easy—there are a ton of recipes that pair egg yolks with chocolate. For instance, this Chocolate Mousse Cake. Cooked eggs enrich a thick layer of creamy chocolate mousse set between two layers of chocolate cake that's draped in ganache. With a layer of chocolate curls, this is a great cake for birthdays.
Chocolate Pudding Snack Packs: This spin on the childhood afterschool snack uses both dark and milk chocolate puddings—which then, of course, gets layered into cute little containers. The container cuteness is optional; and of course you can gussy this up with any kind of extract, liqueur, or spice.
Dark Chocolate Pots de Crème: Serve this intensely rich, chocolately pudding in ramekins for an easy but elegant dinner party dessert.
Custards are just desserts or sauces that blend eggs with sugar and milk or cream. But they also happen to be the base of some of our favorite desserts, most notably Crème Brûlée.
