If you're looking for innovative glazes and fluffy brioche doughnuts, all made fresh daily, Blue Star Donuts in downtown Portland, Oregon, is the place for you.
Micah and Katie Camden opened Blue Star Donuts in early December, something Micah has wanted to do for nearly five years. The Camdens had focused on building other successful restaurants such as Yakuza Lounge, Beast, and DOC. They finally pulled the trigger on this doughnut storefront after opening a sixth Little Big Burger location in winter 2012.
What sets Blue Star Donuts apart from other Portland bakeries? The dough. A trip to St. John Bakery in London roughly three years ago inspired Micah to use brioche dough for all the doughnuts here. Making the dough is an all-day process that starts at 4 a.m. Shepherds Grain bread flour, Steibrs Farms cage-free eggs, Sunshine Dairy whole milk, Larsen's Creamery European-style butter, and yeast are combined. After proofing at room temperature for three hours, the dough is cut into smaller batches and refrigerated for 12 hours. This 15-hour process allows the yeast and flour to fully develop. Each doughnut is fried for about a minute per side, puffing up and reaching a tantalizing golden brown.
In contrast to the lengthy dough-making process, each of Blue Star Donuts' glazes take approximately 15 minutes to make. With the help of head pastry chef Stephanie Donlan, Blue Star Donuts rotates a limited selection of doughnuts each day to give regular customers something different to try.
Blue Star Donuts opens at 7 a.m. on the weekdays and 8 a.m. on the weekends. Closing time is 7 p.m. or whenever all the doughnuts are sold. For at least the first two weeks in business, Blue Star Donuts has sold out by 3 p.m. Micah is adding refrigerator space in the near future to store more dough, and he hopes to stay open through the late-night rush.
