After the craziness of this week, I think everyone needs something homey and comforting. This baked oatmeal is a good choice. It has the texture of a creamy custard topped with oats and studded with chunks of apples. Cinnamon is the natural spice, though feel free to add nutmeg, allspice, or even ground ginger. Maple syrup (Grade B if you can get it!) adds a caramel-y sweetness. Serve big scoops warmed in bowls and you'll be feeling better in no time.
