Cannon Beach is one of those easy-breezy coastal towns where people spend their mornings walking their dogs off-leash along the sand, coffee in hand. And that coffee is probably from the local bakery Waves of Grain.
Step inside and the espresso machines are whizzing behind the counter and a line is snaking towards the door. Our eyes went straight to the platter of "Bohemian Buns". Made from a fluffy brioche dough, these sticky buns are studded with whole pecans and topped with a layer of caramelized granola. Oats, dried cranberries, raisins, and pumpkin seeds become a crunchy, sweet shell on top of the bun. (They also sell bags of their homemade granola, which in my experience is always a good sign.)
Waves of Grain owners Jason and Hillary Fargo bake all the buns, cookies, muffins, biscuits, quiche, cheese sticks (made with Tillamook cheese; the factory isn't far) and many loaves of bread. They even thought of your pooch's needs: look for the fresh-baked doggie biscuits in the glass jar. All the wheat comes from a family's local farm, which they mill into flour from the wheat berries delivered to the bakery.
While it felt a little early to get a cookie, the ginger-molasses ones were speaking to us. Covered in sugar crystals, the plate-sized cookies are chewy and soft with craggly craters. The deep brown molasses-y sweetness gets a spicy bite from the candied ginger specks.
Even the bran muffins, so often just a blah-brown stump, were wonderful. They're moist, hearty, wheaty, and raisin-packed with a broad mushroom-shaped muffin top (always the best part). They're also caffeinated! There's coffee in the batter and an espresso glaze gilded on top.
Just a couple blocks from the water, you can take your treats to-go or sit on the picnic tables out front. It's about a mile from Haystack Rock, Cannon Beach's must-see monolithic rock.
