  • Lemon, Honey and Thyme Frozen Yogurt

Following in the Guerrilla Ice Cream tradition of politically-inspired ice cream flavors, I wanted to pay homage to the European debt crisis with an ice cream that tastes like Greece. (If you feel like your understanding of the economic meltdown across the pond needs a little update, I highly recommend this recent episode of NPR's This American Life.)

This ice cream is light and tart, as any good frozen yogurt should be, but with a deep, floral richness from the honey and a bright, herbaceous finish. The thyme leaves are this frozen yogurt's answer to cookie dough chunks, or chocolate chips—bittersweet and slightly crunchy, they provide a burst of a different and unexpected flavor and texture.
