A Cookie A Day: Jenny McCoy's Banana Chocolate Chip Sandwiches

Note: Welcome to our third annual Cookie Month! Every weekday in December we're going to be sharing a cookie recipe with all of you, just in time for the holidays. So let's get those ovens preheated and get baking!

When we found out that one of our favorite pastry chefs, Jenny McCoy of Craft in New York, contributed a few of her sweets to One Sweet Cookie, we couldn't wait to get into the kitchen and test them out. She's come up with two tasty sandwich cookies: tart Lemon-Poppy Seed Linzers and these whimsical and wonderful Banana Chocolate Chip Sandwiches.

By combining mini chocolate chip cookies with slices of fresh banana, these sandwiches feel like snack time. The cookies themselves are crisp and crunchy and the banana makes for an almost healthy sandwich cookie filling—well, healthier than buttercream or chocolate ganache.

Since banana doesn't have all that long of a shelf life, be sure to serve these banana stuffed chocolate chippers right away. Or if you're planning on making them for holiday if giving you can always fill them with a banana buttercream instead.
