  • Honey-Lime Peaches with Crème Fraîche Clouds

There are few things more enjoyable than a perfectly ripe peach. This recipe for Honey-Lime Peaches with Crème Fraîche Clouds from Romney Steele's Plum Gorgeous falls into the better than a ripe peach category. By soaking slices of juicy peach in a honey-lime syrup with vanilla bean and orange zest, the peaches are elevated to something that is pure summer magic. Tossed with plump figs and spooned with plenty of sweet, peachy syrup, the sliced peaches are finished with clouds of barely sweetened whipped cream and crème fraîche.

There's no need to stick to peaches and figs—this recipe works for pretty much any stone fruit, berries, cherries or even sliced mango. And since this is such a fruit-heavy dessert, it could easily find its way to the brunch table in lieu of a fruit plate.
