Let's face it: Valentine's Day is as much about gooey chocolate as it is about melting hearts. But a box of fancy truffles can be pricey, and doesn't exactly reflect a lot of thought or originality. Just as homemade cards are better than Hallmarks, homemade candy is always more special, and somehow more delicious, than store-bought candy.
What says "I love you" better than a pound and a half of fudge that you made yourself? Lured by the promise of rich, buttery chocolate, and the low price of $5.99, I tested Carnation's Famous Fudge Kit for this week's Mixed Review.
The kit contains: a can of evaporated milk, a bag of sugar mix (sugar with vanilla flavoring and a bit of salt), a bag of marshmallows, a bag of chocolate chips, and a festive pink and white gift tray.
Admittedly, it doesn't take much more to make fudge from scratch, but the prepackaged ingredients make everything quick and easy, with zero margin for error.
To make the fudge, I combined the evaporated milk, sugar mix, and 2 tablespoons of butter in a heavy medium saucepan and boiled them, stirring constantly, for four minutes. Then I dumped in the marshmallows and the chocolate chips and stirred vigorously (it took a lot of elbow grease) until the mixture was smooth. I poured the fudge into the tray and attempted to smooth the surface with a knife, but it came out pretty bumpy and lumpy—part of the charm, I guess.
After two hours of chilling time in the fridge, my fudge was ready to be cut into squares and devoured.
It was slightly crumbly at first bite, but melted as soon as it hit my tongue. There was no hint of graininess, and the taste was sweet and creamy. It was definitely more of a milk chocolate than a dark chocolate flavor, so if you prefer bitter and intense, this might not be the best choice for you. I, however, thought it was irresistibly delicious. And more importantly, so did my sweetheart.
