Rice pudding can be full of all the warm, comforting flavors that we associate with deep winter (cinnamon, apples, I'm looking at you) but don't consider it a one trick pony.

For a tropical change up, try simmering arborio rice in coconut milk. Then top the tender and creamy grains with freshly some whipped cream and chunks of sweet diced mango. Add shredded sweetened coconut or toasted macadamias for an extra level of flavor and crunch.
