"I'm generally not crazy about choux pastry, and out of all the major choux pastries, éclairs are my least favorite. The filling-to-pastry ratio is usually too skewed towards the pastry for my liking, and when the pastry isn't fresh (as tends to be the case, in my experience), it tastes like bleeuuh.
