Weekend Baking Project: Lemon Sunshine Cookies

If most of the country needs anything right now, it's a dose of sunshine. The bright lemon flavor of these cookies is almost as good* and at the very least should cheer you up.

*OK, yes, that kind of freezing weather needs more than a cookie, and... easy to say from my perch in California

The dough has a punch of lemon zest, a discernible taste of butter, and a little buttermilk for tenderness. Because the dough isn't too sweet, each cookie is dipped in a simple glaze made from a mixture of lemon juice and confectioners' sugar. They're simple, easy to prepare, and perky on your palate. Gives you something to do indoors, at least.
