Sisters Melissa and Emily Elsen, owners and operators of Brooklyn pie shop Four & Twenty Blackbirds, have released a book of sixty pie recipes that bring their creations to a much wider audience. The Four & Twenty Blackbirds Pie Book: Uncommon Recipes from the Celebrated Brooklyn Pie Shop is a mouthful of a title, but it's accurate; each pie is cleverer than the last.
The book's minimalist style means it's short on expository prose and long on images. The recipes themselves cut right to the chase, which showcases the ingredients and the way they work together, rather than couching them in adjectives. It's not all pie photos and measurements, though: a full seventy pages (more than a third of the book) is devoted to how-to's, tools, and techniques.
It was easy to select recipes that show off Four & Twenty Blackbird's signature style. First, there's Egg 'n' Grogg Pie, a baked and sliced version of the holiday drink. Next, Junipear Pie, which uses pears and juniper berries to make the uniquely refreshing filling. Then, there's Black Bottom Lemon Pie, an unlikely combination of chocolate ganache and lemon custard. Lastly, Green Chili Chocolate Pie, which relies on the spicy, verdant jalapeño pepper to infuse bittersweet chocolate.
