Bake the Book: Peanut Butter and Jam Bars

Nearly everyone has a childhood memory involving peanut butter and jelly sandwiches. One Bowl Baking taps into that nostalgia, turning it into snack bars that can be made almost as quickly as a PB&J. Here, the crust and crumb topping is made with peanut butter and swirls of black currant jam are mixed into the top.

Tips: As easy as this dish is to make, warming your jam just a little before mixing it into the filling is much easier than trying to spread fridge-cold fruit blobs. And don't worry if your swirls aren't pretty—it's about the flavor more than looks, here.

Tweaks: In case you were wondering, no, these are not as good with almond butter. Chunky peanut butter is the best for that hearty, roasted flavor. Almond butter is a bit too thin. When it comes to the jam, though, black currant isn't your only option. High-quality raspberry preserves would be wonderful.
