You'll never guess the inspiration for this pie. It's clafoutis; a rustic French dessert composed of fruit baked into a simple egg and cream custard. This pie takes the idea of fruit and custard and elevates it, pairing a lightly sweetened, creamy custard made with tangy crème fraîche with tart apples and a crispy pie crust.

The final touch is a sprinkle of oat topping between the filling and the lattice crust. It gives the finished pie a golden brown top and extra crispy texture.
