Tip to future festivalgoers of the New York Wine and Food Festival Godiva Truffle Showdown: come hungry and very ready for something sweet.

We learned from experience this past Friday night, when the NBC Studios at 30 Rock were aglow in desserts from a wide variety of pastry chefs. The chefs were given a specific Godiva truffle flavor from which to draw their inspiration. Each station had a tray of their corresponding truffles for comparison, with classic dark chocolate truffles making appearances alongside pistachio and peach mousse flavors. In general, we swooned over the desserts that packed a bit of extra texture or a contrasting bit of tartness or heat, so that the sweet factor wasn't completely overwhelming.

Laszlo Bollok of Le Cirque took home the prize for audience favorite, and his elegant "Praline aux Amandes avec du Sel de Mer" was a stunning presentation of layered flavors and textures. Our personal favorites were Stephen Collucci's Pistachio doughnuts and Michael Ferraro's Maple Walnut Pork Dumpling—both were fun to eat and full of oozing flavor.
