Step one to a pumpkin s'mores [Photographs and original illustrations: Cakespy]

Ed Note: As the holidays approach, who better to stop by and give us some quirky and fun treats than Jessie Oleson, aka Cakespy? First up, homemade pumpkin graham crackers!

Graham crackers may not strike you as an impressive sweet treat—they're more famous for their role in s'mores than as a stand-alone sweet. But perhaps it's time to challenge that notion with a homemade seasonal variation: pumpkin graham crackers.

These are a subtle treat. They're only slightly sweet, and they don't scream "pumpkin" but rather whisper it, with a lovely moist texture that makes the crackers a bit softer than a plain homemade version. They have an earthy flavor that might make you think, for an instant, "health food", but the spices, brown sugar, and kiss of honey will bring you quickly back to cozy fall snack territory.

These homemade grahams are excellent alone, but for some real fall fun, sandwich them with some chocolate and a Halloween Peeps candy for a spectacularly spooky and highly delicious s'more.
