Bake the Book: Steamed Lemon and Vanilla Syrup Sponge

"Keep the scurvy at bay" is the single descriptive line The Complete Nose to Tail gives to this recipe. And it's not far off: being that a whole lemon is used in the making of the cake, you'll be soaking in the Vitamin C.

Tips & Tweaks: To make the sponge, you need a heatproof bowl with a 1 1/4-quart capacity, and a roasting pan with sides nearly or as high as the bowl (the pan will be filled with water). In the recipe, "caster sugar" is superfine sugar, "vanilla pod" is a vanilla bean, and "double cream" refers to heavy cream.
