What do you get when you top a moist, buttermilk banana cake with sandy crumbs and chocolate ganache squiggles? A darn good knock off of Entenmann's Banana Crunch Cake.
My love for Entenmann's baked goods is deep and abiding. When I was growing up in the tri-state area, their classic crumb cake was a regular part of the Sunday morning routine. It wasn't until I started dating my husband that I discovered Entenmann's made another crumb cake, a banana crumb cake.
I'm not really sure why the Entenmann's cake is called a "crunch" cake—I don't find their crumbs particularly crunchy. If anything, they're much finer than their regular crumb cake crumbs. But let's not quibble when the cake is so tasty. This recipe combines everything you love about banana bread then tops it with crumbs (I've included a modification for those who prefer a truly crunchy crumb). Add some chocolate ganache to that and yeah, I'm sold. I think you will be, too.
