Bake the Book: Peach Melba Jam

Jar summer with this jam, inspired by the original Escoffier dessert of vanilla ice cream, sliced peaches, and raspberry sauce. Sweet preserves the holy trinity with a load of peaches and a little elbow grease. By turns tart and sweet, this is a little slice of hot weather you can savor as long as you like.

Tips & Tweaks: You don't have to go through the hassle of canning. Simply sterilize the jars before filling and store in the fridge, where they'll keep for up to 3 weeks. But if you're intent on extending the life of your jam, canning instructions are provided in the recipe.
