At Pearl Bakery in Portland, the raspberry brownie ($2.50) strikes the perfect balance between fudgy and cakey. It's rich enough to satisfy even the most voracious chocolate craving, but a smidge lighter than its full-on-fudge cousins. The fat square has a fine crumb and is surprisingly soft. It would be perfectly tasty without the raspberry preserves from Glenmore Farms on top, but the slightly sticky spread takes the brownie from "nostalgic" to "knockout". Even if you're iffy on fruit and chocolate combinations, I'd give this one a go.
The somewhat cakey texture also has a side benefit: because it's a bit more sturdy and doesn't have any frosting, the brownie really stands up to being battered around in a camera bag. After a day and night of trudging around in the rain, it emerged from a flimsy paper bag no worse for wear. If you're seeking a treat to squirrel away in a purse or pocket and parcel out, one bite at a time, throughout the day, this berry-accented brownie is a worthy candidate.
