Homemade sprinkles. Pretty awesome.
Humble beginnings
Humble beginnings
The ingredients are remarkably simple: powdered sugar and egg whites, plus 2-3 drops of food coloring. You can always use pasteurized egg whites if you don't trust your real ones. The proportions don't need to be exact; you'll be tweaking it as you go.

It has a flavor!
It has a flavor!
If you make sprinkles from scratch not only will you have awesome homemade sprinkles, but you can flavor them! At Crave Fishbar each color of sprinkle gets a different flavor (the red ones are cinnamon).
Getting the consistency right
Getting the consistency right
You'll have to eyeball the consistency and adjust accordingly, adding more powdered sugar or egg white as needed...

The mixture should begin to thicken with the additional sugar.
The test
The test
You know that the consistency is perfect when a drizzle of the mixture can hold its shape instead of disappearing back into the bowl.
Piping
Piping
When the frosting-like mixture is ready, it gets piped into thin lines on a lined baking sheet. No need to be too perfect during this step as they will soon be broken up into little sprinkle bits of joy.
Sitting out to dry

The lines have to dry overnight.
Almost there!
Almost there!
Once the almost-sprinkles are dry, you can use a spatula or any other implement of your choosing to break up them up into large chunks.
