Get into to warm weather spirit with these tropical cupcakes. A moist vanilla cake is studded with diced pineapple and flavored with rum and coconut. Each cupcake is topped with a coconut cream cheese frosting (that also contains rum, of course).
Making them in mini-muffin tins make them good for a crowd, but feel free to use a standard size cupcake tin. Either way, you'll be surprised by how much this two-bite dessert really tastes like a sip of the drink.
