It's one thing to hear about ecologically harmful farming practices or the abuse of small farmers at the hands of big companies and another to see it first hand. The founders of Kopali Organics are in the latter camp, as they were living and farming on an off-the-grid permaculture farm and sustainability center in the rainforest of Costa Rica when they decided to start their own line of chocolates that would do a small part to reverse these practices.
They currently make three products: chocolate covered banana, espresso beans, and cocoa nibs, all using single origin Peruvian cacao. The organic chocolate covered banana in particular is worth seeking out if you're a fan of Chunky Monkey ice cream, frozen chocolate-covered bananas, or even a good old banana split with plenty of chocolate sauce. At first the texture is a surprise—they melt in your mouth, with an almost creamy center—but the result is a seamless mix of chocolate and banana flavor. The little chocolates are popcorn sized and easy, maybe too easy, to snack on, making them a nice choice for fans of banana who are tired of suffering from artificial banana flavor.
