Tag-A-Long Ice Box Cake
Any Girl Scout cookie makes a good icebox cake, but we like to mix up layers of buttery shortbread Trefoils and lemony Savannah Smiles. It's incredibly easy too...
Whip some cream with powdered sugar.
Cover the bottom of a deep baking dish with cream, followed by a layer of cookies.
Alternate layers of cream and cookies, finishing with a layer of cream. Refrigerate overnight, then serve.
Thin Mint Ice Cream Cake
For a lot of us, the cookie crumb base of an ice cream cake is the best part. And what if those crumbs were made out of Thin Mints?
Make the crust
Grind up Thin Mints in a food processor with a couple tablespoons of butter until you can clump the crumbs together in your hand.
Press the cookie crust into a large baking dish, then top with vanilla ice cream.
Top the vanilla ice cream with a layer of chocolate ice cream (or the flavor of your choice.)
To finish, spread a layer of whipped cream on top of the chocolate ice cream, then freeze until firm. Serve with plenty of sprinkles.
Peanut buttery Tagalongs melt right into brownie batter. Use your favorite brownie recipe (or our favorite mix) and divide it in half. Spread half the batter in a pan, line it with Tagalongs, and spread the rest on top. Bake until a toothpick comes out mostly dry.
