Three Matched Courses Post Dinner
This chocolate-themed tasting menu features three variations on chocolate, each paired with a complimenting wine.
The "white" course hides lime, coconut, and pineapple in a salted white chocolate mousse. It's paired with a German Riesling for a crisp and refreshing first course.
The milk chocolate course layers flavors of coffee, chocolate, and nuts in mousse, ice cream, and a sable cookie. The classic design in the middle of the tasting is meant to anchor the menu in rich flavors and classic technique.
The final course emulates present day philosphy, with seasonal citrus, perennial herbs, and simple design. Blood oranges, dense cocoa cookies, and chocolate sorbet are paired with a Spanish port.
