Proof Bakery would have been worth the 125-mile drive from San Diego even if I wasn't sent there with a mission to find out owner Na Young Ma's top five favorite items. The busy bakery was fully stocked with a variety of baked goods; all hand-made in small quantities, from flaky filled croissants and fruit tarts to savory quiches.
It's the type of place you'd think would be helmed by an insatiable sugar fiend, but Na Young says she's driven more by a desire to perfect her craft than to surround herself with a never-ending supply of sugary goodies. In fact, she really doesn't have much of a sweet tooth, and can only eat little sample bites while she's testing new items.
It may seem counter-intuitive, but being naturally drawn to sweets that don't lean heavily on sugar is actually a boon to the bakery—these are some of the most well-balanced baked goods I've ever tasted.
