Bake the Book: Spicy Pumpkin Seed Pecan Brittle

Even though Edible DIY: Simple, Giftable Recipes to Savor and Share presents this as more of an autumn treat, there's no reason to confine the flavors of cinnamon, fleur de sel, and a kick of cayenne to one season. Liven up winter's monotony with the sweetly spicy crunch of this brittle.

Tips: Just like with our last feature, the Liddabit Sweets Candy Cookbook, you'll need a candy thermometer to properly execute this recipe. The syrup needs to measure 300°F, or reach the 'hard crack' stage; this means that when the syrup is drizzled into cold water, it forms brittle threads. Use this test if you absolutely cannot find a candy thermometer.

Tweaks: For more of a kick, double the cayenne. Or, omit it entirely and add some nutmeg and powdered ginger. A 1/4 teaspoon of each should do the trick.
