At Pure Food and Wine, the food truly is 'pure' in the strictest sense. As a vegan raw food restaurant, all of the ingredients used are in their (relatively) natural states: nothing refined, nothing cooked, nothing overwrought, overprocessed, or overdone. You could even argue that these desserts are (relatively) good for you.
We went behind the scenes to learn what goes into one of their classic desserts: a green tea tiramisu. There's absolutely no dairy, no refined sugars, (no coffee!) and not even any gluten in this eastern take on the tiramisu. Not only does this satisfy the strictest of dietary restrictions (agave allergy, anyone?), but it's a creative and carefully prepared dish that holds up to the demanding culinary scene New York is known for.
