On a recent stop-over in Charleston, I made a visit to WildFlour Pastry my first priority. Owner/head pastry chef Lauren Mitterer has earned a reputation for being one of the city's top pastry chefs, nabbing her first James Beard nomination in 2008 for Outstanding Pastry Chef at Red Drum, and earning a second nomination last year for her work at WildFlour.
Lauren's goal for the shop is to provide pastries for every need and audience, whether it's a sticky bun to munch with a cup of coffee, a fine dining dessert, or a wedding cake. To that end, in addition to running her own retail bakeshop, she supplies local coffee shops with sweets, bakes wedding cakes, and continues to provide Red Drum with two of the desserts she created while working there (hot buttered rum cake and sugar and spice doughnuts, which are served on a skewer).
