My hot chocolate in involves butter, cocoa powder, whole milk, and chopped bittersweet chocolate. It's rich, velvety, and the perfect antidote to the winter blues. This cake is inspired by that cold weather favorite.
The cake roll is a spongy chocolate cake, moist and fluffy. The filling is whipped cream, stabilized with cream cheese and unflavored gelatin. Hot chocolate's marshmallow topping had to be represented, and mini ones are folded into the cream. The chewy marshmallows absorb moisture from the cream and turn into small, melting puffs. Since this is a chilled desserts, warmth had to be added: a thick bittersweet chocolate sauce is spooned over the cake right before serving.
Serve this cake during the holidays; it will be all cheer and delight.
