I don't put sugar in my coffee. I put cookies in it. Ok, not all the time, but I do love dunking some crisp biscotti into my coffee. After contact, the cookie and the coffee absorb a little of each other, like the Harry Potter-Voldemort of sweets transactions, one might say. (But not me. I don't love that movie. Nope.)
In all seriousness, I do take my coffee without sugar, which is why these glazed biscotti are a neat trick. Eaten plain, the icing adds a shiny layer of sugar to the top of a spiced cookie, which is never a bad thing. Dunked in coffee, a little of the sugar slides off, making my morning brew just that much better.
However it's not all about the icing—the cookie underneath is spiced with cinnamon, nutmeg, allspice, and cloves. Vanilla rounds out the flavor while molasses adds a touch of gingerbready richness. A double bake makes them crisp and crunchy, and perfect for gift-giving too.
