This is a special edition of Weekend Baking Project for those of you who will be staying home while the Frankenstorm threatens the East coast. These recipes can be made with pantry and fridge staples, so no need to run to the store.

Shortbread Sandwiches

These Shortbread Sandwiches are about as easy as cookies come. The base is shortbread—that's just butter, flour, sugar, and a hint of salt—and the filling can be anything you have lying in your fridge. Half a jar of preserves? Great. Some Nutella? Even better. Use whatever you have and won't mind replacing when the storm is over.

Your stock of bread is going stale but you don't want to throw it out because what if the storm is going to last a biblical number of days? Re-purpose it into extra sustenance in the form of bread pudding with some milk, butter, eggs, sugar, and heavy cream.
