White chocolate makes this rice pudding from Southern Living: Classic Southern Desserts just a little more decadent. Sweet and creamy, topped with a slightly tart and citrus-forward cherry sauce, this is a pudding you can whip up on a weekday or make as a holiday dessert.
Tips: If you can't find dried cherries (though they should be readily available in the bulk aisle of a natural foods store, if not your regular grocer), substitute dried cranberries, just make sure they haven't had sugar added to them. Also, be sure to peel the ginger before you grate it.
Tweaks: The rice pudding is plenty sweet on its own without an additional 6 ounces of sugar from the dried cherry sauce. Cut it down to 1/4 cup for a better sweet/tart contrast.
