Bake the Book: Mississippi Mud Cake
Chocolate cake doesn't have to be fancy to be good. This recipe for Mississippi Mud Cake from Southern Living: Classic Southern Desserts is just as dark as its namesake. The deep chocolate flavor is cut with the soft, sweet chew of marshmallow and the pleasant crunch of pecans.
Tips: The better the chocolate you use, the better the result. The same goes for the cocoa powder. Since this recipe doesn't call for baking soda, you can use either Dutch-processed or non-Dutch processed cocoa; Ghirardelli is a good choice for price and availability.
Tweaks: Customizing the flavor of a frosting is an easy way to add variety to a cake. Substitute some of the milk with strong coffee, or add cinnamon to the cocoa powder. Play with the ratio of cocoa powder to powdered sugar if you think it tastes too sweet.
