For chef Emily Luchetti, this recipe "is the quintessential summer dessert." We agree that it's perfect for this time of year: it's light, cold, and uses three types of summer berries.

There's a little bit of prep work involved, as well as a 6 hour stint in the refrigerator, so plan ahead. But it's just those qualities that make it perfect for a summer dinner party: make the pudding in the morning and forget about it until you're ready to eat.
