"This weekend I made my annual peach pie. Once a year and only for those I love. Each year the recipe changes, depending on the quality of the peaches and how much I care about those who might be eating the finished product. For the crust I deviated from my usual recipe. I opted for the crust recipe featured in the Serious Eats book that I just received as a birthday gift (!!! They are not paying to write this, but Real Talk it is a Damn Good Recipe.) It was part of an apple pie recipe but it is no time for apple pie! It is peach pie season, people. I adjusted slightly by using vanilla sugar instead of regular white sugar and then dusted the top with sugar in the raw to get it super crunchyflakey. The indulgent combo of butter and shortening was a perfect compliment to the sweet and bright peaches. For the pie innards I adapted the recipe over here for my 10 inch deep dish pie plate that is excessively large but still does not have a trapdoor bottom leading to endless pie forever. I used about 3 pounds of peaches, threw in some light brown sugar, and almond extract (why not? I have no scruples, come at me purists.) Paired well with vanilla ice cream as nature intended."—Rachel G.
