This has been the best summer for fruit in recent memory, with each release of something new into the farmer's market being better than the item before. Thankfully, this trend has continued with peaches, which are more juicy, sweet, and concentrated with intense flavor than they've been in recent seasons. They're so good, I've made it my personal mission to make as many peach pies as I can before fall.
I'm in love with traditional peach pie, but every so often it's nice to shake things up. This less-conventional model is inspired by an peach and ginger herbal tea of which I am particularly fond. The bright, sweet peach notes are lifted by the zing of the crystallized ginger in the oatmeal crisp topping, causing each bite to dance on the tongue. This pie may be served at room temperature, but I prefer it warm with a scoop of vanilla ice cream.
