Picnic season is in full swing, and these sandwich cookies are the perfect portable treat. Lemon does double duty, flavoring both the cookies and the filling, which is sweet-tart from lots of juice and zest. The cookies aren't your average sugar cookies: corn meal and poppy seeds add extra flavor and texture.

Have fun and tailor these to the occasion. For example, I plan on breaking out my sailboat-shaped cookie cutter and packing a batch for the beach.
