Weekend Baking Project: Dark Chocolate Cherry Fudge

Tomorrow is National Fudge Day! We're personally celebrating by making this Dark Chocolate Cherry Fudge.
Each melt-in-your-mouth square is like Black Forest Cake in candy form. Cherry preserves and tart dried cherries are addictive when paired with extra dark chocolate. Don't let the candy thermometer scare you. This fudge is easy to put together and, best of all, it will keep for weeks (I like it straight out of the freezer).
