Nothing says "school's out" and "summer's here" like the sound of the ice cream truck. And while Ninja Turtle pops may be replaced by Sponge Bob with bubble gum eyes, a perennial favorite is the creamsicle.
This pie is a natural, slightly grownup version of the childhood treat (though we promise, kids will still love it too). The creamy, sweet-tart orange filling is laid in a buttery oat-crumble crust.
