Bake the Book: Salted Caramel Banana Bread Puddings
Bread and bananas are two items that seem to fall by the wayside, at my house at least. But a two day old half baguette and a spotty banana or two are exactly what make this recipe for Salted Caramel Banana Bread Puddings the ideal last minute dessert.
Adapted from Alice Medrich's Sinfully Easy Delicious Desserts, these warm, individual bread puddings begin with caramel sauce. If you're feeling ambitious, you could certainly mix up a batch of your own, but store bought sauce or a can of dulce de leche works wonderfully as well.
Once you've got your caramel situation sorted, stacks of caramel coated bread and bananas are piled into ramekins, topped with vanilla custard, dusted with sugar, and baked until bubbly and golden. Salted caramel, eggy, custard-y bread, and bananas all together in a glorious bread pudding? Not bad for leftovers.
