April 6 is Tartan Day, which means we get to celebrate Scottish heritage with breezy kilts, Scotch whiskey, bagpipes, highland dancing, affected brogues, and whatever other stereotypes one can call to mind (aye?).
But most importantly—at least in my humble and sweet-toothed opinion—we get to eat loads of shortbread cookies. These Scottish biscuits are astonishingly easy to make, requiring just four staple ingredients that are probably already sitting in your pantry.
I like to think of shortbread cookies as buttery, crumbly flakes of heaven. If that's not endorsement enough, these twelve twists on the traditional recipe are sure to have you salivating in no time. Shortbread slathered in chocolate, caramel, or peanut butter? Slathered in all three, sprinkled with nuts, and then mixed into ice cream? These recipes are mere windows into a world of possibilities, so feel free to use them liberally and report back on any exciting discoveries. And of course, be sure to have a happy Tartan Day!
