A Cookie A Day: Jacques Torres's Chocolate Chip Cookies

From the man known as Mr. Chocolate, we bring you the most chocolaty of chocolate chip cookies. Adapted for One Sweet Cookie, Jacques Torres's Chocolate Chip Cookies are more chocolate than cookie, striated with chards and chunks of bittersweet chocolate with just the right amount of butter and salt—i.e., lots.

Since these cookies are so chocolate focused, sourcing a really fine bittersweet is key here, this is the time to break out the big guns: Scharffen Berger, Callebaut, or Valrhona are all good picks. These cookies work best when your chocolate has been broken into irregular pieces, from giant-sized squares that ooze all over the cookies to itty bitty flecks that make sure that every bite is chocolate-spiced.
