On any given day The Treats Truck has all sorts of cookies available, but these Caramel Crème Sandwiches might very well be the best of the bunch. Why do we prefer these to these to all of the other very tasty offerings at Kim Ima's mobile sweet shop? The answer is simple: browned buttercream.

These cookies begin with a brown sugar dough, which is rich, buttery, and very caramely on its own. But it's the simple filling of these sandwich cookies that makes them so memorable. Instead of whipping plain old butter into confectioners' sugar to make the buttercream filling, here the butter is browned before going into the KitchenAid.

You're left with a very grownup buttercream with deep, rich undertones of brown butter and tiny specks of butterfat running through it. It's a simple step but a really smart one, and it makes these cookies downright irresistible.
